Zucchini "Pasta" Dinner



My friend Ali said she's been making fresh pasta-like dishes using raw zucchini as the "noodle". I tried it last night and thought it tasted great - light, fresh, and flavorful. I served it with a pasta so I just called mine a salad. Worked great as my green salad for the night.

Ali's Zucchini Pasta

Zucchini, peeled and then shaved
Tomatoes, quartered
Basil, torn
Olive oil
Lemon juice
Goat cheese
Salt & pepper
