Farmer's Market Goods & Weekly Meal Plan

It was an exciting day at the market. The guys at Wilson Fish were all smiles selling the first halibut and king salmon of the season caught yesterday off the Washington Coast. I wasn't the only one anxiously awaiting this day as the line was stacking up seconds past 10am. From sea to fork in 24 hours. Talk about fresh fish!

I'm also giddy about it being asparagus season. So giddy, in fact, that I bought one bunch for each day. I can eat an obnoxious amount of asparagus - sometimes three meals a day... with scrambled eggs for breakfast, leftovers from the night before for lunch and a new batch broiled for dinner. You could throw in an asparagus appetizer and I would happily indulge. It's my number one green.

And a few new things this week... white pizza inspired by my sister-in-law and chicken Bahn Mi sandwiches from my friend Tara. Can't wait for those nights.

No meatless night this week. Ught-oh. Something to think about next week.

Tagliatelle with lemon and parmesan (I didn't follow exact measurements. Just used lots of lemon juice and zest, parmesan, olive oil and pepper with fresh fettuccine noodles. YUM!)

Kale Chips

Crisp Black Bean Tacos with Feta and Cabbage Slaw (using leftover black beans)

Roasted Cauliflower

1 head cauliflower, cut into large bite size florets
1/4 cup olive oil
kosher salt
freshly ground black pepper
red chili flakes
5 or 6 cloves garlic, chopped
juice from 1/2 or 1 lemon

Preheat oven to 450.

Toss cauliflower with olive oil, salt, pepper and red chili flakes. Transfer to a baking sheet and bake for 7 minutes. Meanwhile, chop garlic and soak in olive oil. Stir cauliflower and bake for 7 more minutes. Stir in garlic and extra olive oil. Bake for 5-7 minutes. You want to roast the cauliflower and add the garlic at the end so the garlic doesn't burn. Remove and toss with lemon juice (start with half and add more to taste).

Famers Market Goods & Weekly Meal Plan

Home from vacation and back to the grind. I had some great miso marinated Black Cod in Hawaii so I couldn't resist buying some fresh caught Black Cod at the market yesterday. Can't wait to try it. I planned on having it tonight but after reading over several recipes I learned that most require the fish to marinate overnight. Oops. I guess we'll be having that tomorrow. Don't make the same mistake I did.

Here's this week's meal plan for mi casa. Sometimes I adjust it based on what we have leftover (chicken) or what's freshest at the store that day (Mutual Fish).

Would love to have you share your meal plan if you're in the habit of making them. I need some inspiration to mix it up a bit.

Farmers Market Goods & Weekly Meal Plan

The last week has been a busy one but I'm back, and ready to blog! Here's my usual Sunday post... weekly meal plan using all my farmers market goods.

BLTAs (My husband and I are both currently obsessed with Old Mill oat bran bread. It's delicious for toast with butter and jam, grilled cheese or BLTs.)

Farmers Market Goods & Weekly Meal Plan

I loaded up at the market this morning and just planned out my week's meals. I should preface this by saying that I'm not always great about sticking with my meal plans. For one reason or another, something always gets flip flopped (arugula won't last until Wednesday, chicken hasn't thawed yet, missing an ingredient for a recipe, etc). That said, I think as long as you have a basic outline, enough food and some creativity, you can mix it up as needed.
