Emma’s Chickpea “Tuna” Salad
1 can of chickpeas, drained, rinsed and mashed
Vegan mayo
Sweet relish
Organic celery
Salt & Pepper
Eat straight from the bowl, on an open-faced sandwich with avocado and seasoning, or scoop with a tortilla chip and top with a dot of hot sauce as shown above.

Fresh lemon juice
Shallot
Dijon
Herbamare
