Manchego Salad

My friend Ali made this delicious Manchego Salad one night with baby spinach and radicchio from her garden. It was such a treat. Delicious.

Apple, chopped
Dates, chopped
Walnuts, chopped

Dressing

Grated Manchego
Lemon juice
1 T shallots, minced
Olive oil
Honey
Salt & Pepper
