Autumn Soup

There are so many great recipes for butternut squash soup. Any soup lover probably has a version they adore so I won't bore you with another basic recipe. If you're looking for something a little different though, try the Barefoot Contessa's Roasted Butternut Squash Soup with Curry Condiments featured in House Beautiful (not the current issue). The condiments really mix it up and offer a unique twist to a traditional soup. Toppings include raisins, banana, cashews, coconut, and scallions. What a delicious combination with the curry spiced soup. I loved it. Serve with a great green salad and you've got yourself a perfect autumn dinner.

It's been a long time since I made this recipe but I do remember adding more chicken stock. It was quite thick with only 2-3 cups so have a few extra just in case you run into that problem too. Bon appetite!
