Pasta all'Amatriciana

I pulled this recipe for Pasta all'Amatriciana from Food & Wine magazine and just made it last night. I was actually shocked at how good it was. I even said to my husband at one point "Honey, close your eyes, doesn't it taste like you're in Italy?!" It was really really good and I will definitely make it again.

I used Applegate pancetta (which I diced), bucatini noodles (from PFI), and San Marzano brand whole tomatoes.
