Tonight I made the #8 Crepe quesadilla-style. I used all the same ingredients inside flour tortillas. I warmed them in a saute pan over medium heat (no butter necessary) until the tortillas were starting to turn golden brown and the cheese was melting. I also added spinach for some extra greens. They were really good, especially with the sweet Chili Lime Sauce. It was quick and easy for dinner plus I have extra ingredients already prepped for tomorrow's lunch. Great meatless option if you're looking for something new and different.
(Does it count for meatless night if I ended up making one kid a grilled ham & cheese sandwich? Oops.)
