Classic Chili

 



This is my grandma's classic chili recipe that I've been eating my whole life. I always crave it when the weather starts to get cold. 


My mom has made a few adjustments over the years, as did I this last time I made it. She always made it with ground beef but I like ground turkey (dark meat if I can find it). I added jalapeno and a little chicken stock tonight. It's best with a little of my Aunt Dora's hot sauce but when we don't have that, we find other ways to give it a kick (like the jalapeño). Three generations perfecting the recipe. It's so good!


The toppings are essential, as is the cornbread. 



Classic Chili

Grandma Tess, Yia Yia and Me 

 

1 lb ground turkey, preferably dark meat

2 T olive oil or canola oil

1 small onion, diced

½-1 green pepper, diced small

2-3 celery stalks, diced small

½-1 jalapeno, minced

3-4 garlic cloves, minced

2 bay leaves

½ t oregano

½ t paprika

1 t cumin

2-3 T chili powder

½ t bit sugar

1/2 t salt

1 150z can tomato sauce

1 can stewed tomatoes

1/2 - 1 can diced tomatoes

2 cans pinto beans, drained and rinsed

1 cup chicken stock 

Salt & pepper

 

 

Heat oil in a large sauté pan over medium-high heat. Brown turkey. Season with salt, pepper, garlic granules and cumin. Turn off heat when 90% cooked. 

 

In a large crockpot, heat another splash of olive oil over medium heat. Sauté onions for a few minutes until soft. Add green pepper and celery and sauté until softening. Add jalapeno and then garlic. When almost ready, add bay leaves, oregano, paprika, cumin, chili powder, sugar and salt. Then add tomato sauce, stewed and diced tomatoes (beaking up with your hands), and chicken stock. Bring to a boil, then reduce and add the beans. Cook on low for 15 minutes. Season with salt. Add more seasoning to taste.

 

Serve with your choice of toppings:

 

Sour cream

Shredded cheese

Green onion

Red onion

Cilantro

Crumbled tortilla chips

 

Always best served with cornbread. I like Marie Callender’s Organic Cornbread.

Banana Muffins




One of my very first posts was about my grandma's banana muffins. I love them. Ever since my friend Shannon revised my zucchini bread recipe and made it a bit healthier, I've been thinking I should do the same with these. Not knowing how, I reached out to my friend Marion and she gave me some simple adjustments to make them healthier without sacrificing their great flavor. Just made these and they are delicious. I did 3 versions (of course)... 1/3 plain, 1/3 with chocolate chops and 1/3 with chopped walnuts. The plain ones turned are great so I imagine the others are even better. We'll eat plain or nut for breakfast and chocolate chip for dessert. My kids go crazy for this stuff.


Grandma Tess's Banana Muffins
Adapted by Marion

1/4 c butter
1/4 c coconut oil (or a little less even)
1 c sugar (or a little less even)
1/2 cup apple sauce
2 eggs beaten
1 c white flour
3/4 c whole wheat flour
1/4 almond flour/meal
1/2 t salt
1 t baking powder
3/4 t baking soda
1/4 c almond milk 
1/2 t lemon juice
1 c mashed over-ripe banana
1 t vanilla
½ c nuts, optional
½ c chocolate chips, optional

Mix in order given. Butter muffin pans or use paper muffin cups. Fill muffin pans 2/3 full (you might end up with extra batter but don’t fill tins too high). Bake at 375 for 18-20 minutes.

This batter made 18 muffins for me.

Going Bananas

Banana Macadamia Nut Muffins from Epicurious

I recently came across a recipe for whole wheat banana muffins on a cute little blog called Sweet Fine Day. What triggered my interest was that it said her daughter was a picky eater but ate these up so I gave them a whirl. They were good and my daughter gobbled them up, but sadly they weren't enough for my sweet tooth. Once I have the craving though, I can't stop until it's been satisfied. So off I went to track down some sweet banana muffins for yours truly. First stop - my grandma's old recipe that my mom grew up on and loved. I thought I'd give nuts a whirl so I made three versions - plain, pecan and walnut. They were delicious, and yes, quite sweet. They should really be called banana cupcakes! I thought I should compare an old recipe with something off my tried and true recipe source, Epicurious, so I made their Banana Macadamia Nut Muffins. They were all delicious but the Banana Macadamia Nut Muffins were a bit lighter than my grandma's recipe. I think you could switch out the nuts if you preferred walnuts or pecans. I'm not sure that I've settled the nut debate yet so next time I might have to do a third, a third, a third. Either way, you can't go wrong with a banana muffin every morning with your coffee jolt of choice (cappucino or americano pour moi)!

Grandma Tess's Banana Muffins
½ c butter
1 ½ c sugar
2 eggs beaten
2 c flour (scant)
½ t salt
1 t baking powder
¾ t baking soda
¼ c sour milk (add 1/2 t lemon juice to milk and let sit)
1 c mashed over-ripe banana (or more)
1 t vanilla
½ c nuts optional

Mix in order given
Butter muffin pans or use paper muffin cups
Fill muffin pans 2/3 full (you might end up with extra batter but don’t fill tins too high)
Bake at 375 for 25 minutes
